What is it you do?
“Le Barathym opened its doors in July 2007, in the charming little village of Nassogne, on the doorstep of the Ardennes. This former bistro, now fully renovated, serves up delicious, simple, tasty and above all seasonal food, winning a Bib Gourmand award in 2015. Chefs Nicolas Alberty, Cédric Orban and Julien Doucet take pride in offering contemporary cuisine with a modern accent. The restaurant also features a splendid terrace for diners to enjoy in fine weather. A paradise where gourmets can take advantage of all the good things on offer.”
What prompted you to seek "Famenne-Ardenne UNESCO Global Geopark Partner" status?
“The Geopark has the potential to drive tourist development based on quality products in keeping with UNESCO values. Being part of this project could really enhance the quality offered by our restaurant and, above all, encourage us to think about our environmental impact and what we could do to reduce it as much as possible.”
What is your approach to sustainable development and environment friendly practices?
“Most of our emphasis is on the products we use in our cuisine. Our meat comes from the village butcher's and our cheese from the next village. We source our vegetables from an organic market garden on the Gerny plateau, right in the middle of the Calestienne limestone strip. We have also decided to serve quality Belgian wine and local beer.”
